Eggplant Rollatini

Delicious eggplant filled with spinach and cheese cooked in marinara sauce.

Ingredients

  • 12oz marinara sauce
  • 1 eggplant
  • 1 egg
  • 1/2 cup spinach
  • 1 Tbsp olive oil
  • 10oz ricotta cheese
  • 1 tsp italian seasoning
  • Salt, pepper + to taste
  • 1/2 cup mozzarella cheese (optional)

Instructions

  1. Preheat oven to 400°F.
  2. On a cutting board, slice the eggplant length-wise creating thin strips of eggplant, at least 4, and placed them on a baking dish.
  3. Combine olive oil with italian seasoning, salt, and pepper in a small mixing bowl.
  4. Brush the olive oil mixture onto the eggplant strips.
  5. Bake for 25 minutes and then let it cool down.
  6. Set oven to 375°F.
  7. Combine the ricotta cheese with the spinach.
  8. Take the cooled eggplant strips and spread the ricotta cheese and spinach mixture on half of each strip. Roll each strip from the filled end.
  9. Spread the marinara sauce on the baking dish and place the eggplant strips on top.
  10. Optionally cover in mozzarella cheese.
  11. Bake for 25-30 minutes and enjoy!
