Delicious eggplant filled with spinach and cheese cooked in marinara sauce.

Ingredients
- 12oz marinara sauce
- 1 eggplant
- 1 egg
- 1/2 cup spinach
- 1 Tbsp olive oil
- 10oz ricotta cheese
- 1 tsp italian seasoning
- Salt, pepper + to taste
- 1/2 cup mozzarella cheese (optional)
Instructions
- Preheat oven to 400°F.
- On a cutting board, slice the eggplant length-wise creating thin strips of eggplant, at least 4, and placed them on a baking dish.
- Combine olive oil with italian seasoning, salt, and pepper in a small mixing bowl.
- Brush the olive oil mixture onto the eggplant strips.
- Bake for 25 minutes and then let it cool down.
- Set oven to 375°F.
- Combine the ricotta cheese with the spinach.
- Take the cooled eggplant strips and spread the ricotta cheese and spinach mixture on half of each strip. Roll each strip from the filled end.
- Spread the marinara sauce on the baking dish and place the eggplant strips on top.
- Optionally cover in mozzarella cheese.
- Bake for 25-30 minutes and enjoy!
