Eggplant, zucchini, tomatoes and herbs mixed with pasta sauce and basil.

Ingredients
- 1 24 oz can of pasta sauce
- 4 roma tomatoes
- 2 zucchini
- 1 eggplant
- 1-2 Tbsp basil (I used dried)
- 2 Tbsp olive oil
- Salt, pepper + to taste
- 1/2 cup parmesan cheese (optional)
Instructions
- Preheat oven to 375°F.
- Cut the tomatoes, zucchini, and eggplant into slices on a cutting board.
- In a medium-sized casserole or pyrex dish, add the pasta sauce mixed with salt and pepper.
- Place the vegetable slices standing upward in an alternating pattern on top of the sauce.
- Cover the vegetables with olive oil and sprinkle some basil on top.
- Optionally – top with parmesan cheese.
- Bake for 30-35 minutes and enjoy!
