Ratatouille

Eggplant, zucchini, tomatoes and herbs mixed with pasta sauce and basil.

Ingredients

  • 1 24 oz can of pasta sauce
  • 4 roma tomatoes
  • 2 zucchini
  • 1 eggplant
  • 1-2 Tbsp basil (I used dried)
  • 2 Tbsp olive oil
  • Salt, pepper + to taste
  • 1/2 cup parmesan cheese (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Cut the tomatoes, zucchini, and eggplant into slices on a cutting board.
  3. In a medium-sized casserole or pyrex dish, add the pasta sauce mixed with salt and pepper.
  4. Place the vegetable slices standing upward in an alternating pattern on top of the sauce.
  5. Cover the vegetables with olive oil and sprinkle some basil on top.
  6. Optionally – top with parmesan cheese.
  7. Bake for 30-35 minutes and enjoy!
