The best healthy stuffed peppers made with couscous and vegetables mixed with spice.

Ingredients
- 12 oz pasta sauce
- 2 red peppers
- 1/2 cup couscous
- 1 zucchini
- 1/2 cup onion
- 1/2 cup spinach
- 2 Tbsp olive oil
- Salt, pepper + to taste
- 1/2 cup parmesan cheese (optional)
Instructions
- Preheat oven to 375°F.
- Cook the couscous in a rice cooker using 3/4 cup water with 1/2 cup couscous.
- On a cutting board, cut off the tops of the red pepper and remove the insides to create space for a filling.
- Peel the zucchini and then dice the zucchini, onion, and spinach.
- In a pan, combine the vegetables with olive oil and cook for 5 minutes. Add in the pasta sauce, spinach, salt, and pepper and cook for another 3 minutes.
- Combine the vegetables in the pan with the cooked couscous in a mixing bowl.
- Stuff the peppers with the filling from the mixing bowl and optionally top the stuffed pepper with parmesan cheese. Place the peppers on a baking sheet.
- Bake for 45-60 minutes and enjoy!
