Vegetable Couscous Stuffed Peppers

The best healthy stuffed peppers made with couscous and vegetables mixed with spice.

Ingredients

  • 12 oz pasta sauce
  • 2 red peppers
  • 1/2 cup couscous
  • 1 zucchini
  • 1/2 cup onion
  • 1/2 cup spinach
  • 2 Tbsp olive oil
  • Salt, pepper + to taste
  • 1/2 cup parmesan cheese (optional)

Instructions

  1. Preheat oven to 375°F.
  2. Cook the couscous in a rice cooker using 3/4 cup water with 1/2 cup couscous.
  3. On a cutting board, cut off the tops of the red pepper and remove the insides to create space for a filling.
  4. Peel the zucchini and then dice the zucchini, onion, and spinach.
  5. In a pan, combine the vegetables with olive oil and cook for 5 minutes. Add in the pasta sauce, spinach, salt, and pepper and cook for another 3 minutes.
  6. Combine the vegetables in the pan with the cooked couscous in a mixing bowl.
  7. Stuff the peppers with the filling from the mixing bowl and optionally top the stuffed pepper with parmesan cheese. Place the peppers on a baking sheet.
  8. Bake for 45-60 minutes and enjoy!

Notes

This is a wonderful addition to any dinner table and simple to make.
