Vegetable Fritatta

Veggie Frittata

Simple and superb, we call this a wonder of the tastebuds. This healthy treat combines eggs and vegetables to make a delicious meal.

Ingredients

  • 6 eggs
  • 1/4 cup almond milk
  • 1 zucchini
  • 1/4 cup onion
  • 1/4 cup mushrooms
  • 1/2 bell pepper
  • 1/2 cup spinach
  • 1 Tbsp olive oil
  • Salt, pepper + to taste
  • 1/2 cup cheddar cheese (optional)

Instructions

  1. Preheat oven to 400°F.
  2. On a cutting board, chop up the zucchini, onion, mushrooms, bell pepper, and spinach.
  3. In a pan, cook the chopped vegetables with olive oil for 5 minutes.
  4. Whisk the eggs, almond milk, salt, and pepper in a small mixing bowl.
  5. In a medium-sized casserole or pyrex dish, combine the cooked vegetables with the eggs mixture and optionally top with cheddar cheese.
  6. Bake for 15-20 minutes.
  7. Enjoy~!
