Ingredients
- 6 eggs
- 1/4 cup almond milk
- 1 zucchini
- 1/4 cup onion
- 1/4 cup mushrooms
- 1/2 bell pepper
- 1/2 cup spinach
- 1 Tbsp olive oil
- Salt, pepper + to taste
- 1/2 cup cheddar cheese (optional)
Instructions
- Preheat oven to 400°F.
- On a cutting board, chop up the zucchini, onion, mushrooms, bell pepper, and spinach.
- In a pan, cook the chopped vegetables with olive oil for 5 minutes.
- Whisk the eggs, almond milk, salt, and pepper in a small mixing bowl.
- In a medium-sized casserole or pyrex dish, combine the cooked vegetables with the eggs mixture and optionally top with cheddar cheese.
- Bake for 15-20 minutes.
